SIMPLE SAUTEED MUSHROOMS:

2 cups of mixed chopped mushrooms
1 Tablespoon olive oil
1 teaspoon chopped garlic
1 teaspoon soy sauce

1. heat your oil in a pan on medium heat and add your chopped garlic
2. heat the garlic until almost brown
3. add chopped mushrooms and sautee the mushrooms until they are starting to become limp, for about 5 minutes
4. add soy sauce, cook for 1-2 more minutes
5. enjoy as a side dish, in pasta, on meat, in a warm salad, over quinoa or pretty much any way you like 'em!

 

MUSHROOMS & GREENS OMELETTE:

1.5 Tablespoons olive oil
2-3 eggs
1 cup of chopped mixed mushrooms
1-2 cups baby kale or other dark leafed greens

1. heat olive oil in a pan on medium heat
2. scramble your eggs in a bowl, add a pinch salt and pepper for taste, and put them aside
3. sauté your mushrooms and greens for about 3 minutes in the olive oil until they are almost limp and then take them out of the pan
4. make sure you have enough oil in the pan, and pour your scrambled eggs mixture into the pan
4. Pour the mushroom/green mixture on top of your cooking eggs
5. When the bottom of the eggs is cooked enough to be firm, flip over one side of the egg mixture so your omelette is in now folded in half
6. Flip the whole omelette after a few minutes and cooking until eggs are cooked through or as soft as you like

 

MUSHROOM-TURKEY BURGER:


1 lb ground (organic, pasture raised, if possible) turkey
2 cups finely chopped mixed mushrooms
1 onion, diced
2 Tbsp soy sauce or Worcestershire sauce
1 egg
herbs of your liking such as rosemary, thyme, chives and oregano
avocado oil (or another oil used for high heat)
olive oil

1. Finely chop your mushrooms and onion
2. sautee your onion and mushroom over medium heat in olive oil for about 10 minutes or until they are just brown
3. meanwhile whisk one egg in a side bowl
3. in a large bowl mix your ground turkey, sautees onions and mushrooms, soy sauce, raw egg and herbs. (I like to do this with my hands to ensure they get really mixed together)
4. pat your mixture into 4 patties and add to a pan on medium heat with 3 Tbsp Avocado oil, and brown them on each side. (you can grill them or place them in a boiler, alternatively.) Lower the heat once they are browned and let them cook for around 10 minutes, or until cooked through in the center and no longer pink.
5. Enjoy your burgers on buns or over a green salad!

WILD RICE & MUSHROOMS

1 ½ cup wild rice

1 yellow onion

handful or parsley, chopped

2 ½ cups sliced assorted mushrooms

2 Tbsp olive oil

salt and pepper

½ cup sherry, or marsala or white wine

 1.Cook your wild rice according to directions on package in a small pot.

2. Sautee your onion and garlic on medium heat with olive oil until brown.

3. Add sliced mushroom, salt and pepper to the onion and garlic and keep sautéing for another 5 minutes or so until mushrooms start to get soft.

4. Add sherry (or marsala) if you have any (if not, any white wine is a good alternative!) parsley , salt and pepper to the mushroom mixture and turn heat to a simmer and let it cook down so the liquid is mostly absorbed, for about  another 5 minutes.

5. Combine this to your cooked rice and sprinkle some parmesan on top, optionally. Enjoy with a nice side salad!
