ROSH HASHANAH APPLE HONEY CAKE

I am Jewish, and a tradition for Rosh Hashanah (Jewish NewYear) is to dip apples in honey to signify the sweet year ahead. I love this Holiday as it’s all about celebration and looking ahead with positivity.

This year for our Rosh Hashanah dinner, my Mom and I decided to make an apple honey bundt cake with the apples we picked upstate with the boys. I was a little nervous it wouldn’t be yummy, but it turned out so well! My mom had this recipe stashed away in her book of hand written recipes, and while it definitely has its fair share of sugar, it also has lots of apples, honey, and love baked into it, so for a special occasion this is a great treat!

You will need a Bundt Cake Pan so make sure you have one, borrow one, or order one online since the cakes from these pans are gorgeous and you can have fun with lots of recipes. You will also need a Cuisinart to shred the apples and an electric mixer.

You’ll need:

  • 3 large eggs

  • 3/4 cup honey

  • 3/4 cup light white sugar

  • 1 1/4 cups melted butter

  • 1 1/2 tsp vanilla

  • 3 cups all purpose baking flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 heaping Tablespoon cinnamon

  • 3/4 tsp salt

  • 1/4 tsp allspice

  • 1 tspn ground cloves

  • 4 Granny Smith apples (peeled, cored, and shredded)

  • OPTIONAL- 3/4 cup of chopped walnuts and/or 1/2 cup raisins (we did not add these but next time I will for added yumminess!)

Pre-heat Oven to 325 degrees.

Prepare your bundt pan by greasing it well with a cooking spray or butter, getting in all the nooks and crannies, and then adding flour to the top and patting off the excess. This will ensure your cake pops out nicely!

Now mix your eggs with electric mixer until they are a bit foamy. Then add melted (but not too hot) butter, honey, vanilla and sugar and mix on medium speed until well blended.

In a separate bowl mix your dry ingredients together: flour, baking soda and powder, and spices.

You’ll also need to peel and core your 4 Granny Smiths, and then put them in the Cuisinart and shred them.

Add the dry ingredients slowly to the wet ingredients and mix on medium speed until its too thick to keep going. Then use a spoon to mix the badderer together.

Fold in your shredded apples to the cake badder.

Put the badder in the Bundt Pan, but make sure there is at least an inch or two at the top so your cake doesnt overflow.

Place in the oven and let this cook for 70-90 minutes.

Let it cool for about on hour and then delicately turn the pan over and the cake should come out onto your hand. Flip it right side up and sprinkle powdered sugar on top.

Serve with Vanilla Ice Cream or Whip Cream (We added some cinnamon to our whip cream for more Fall flavor!)
