Super easy Apple Muffin Recipe

I’m on an apple recipe roll :)

While these muffins should be eaten as a treat or for dessert and NOT for breakfast due to their high glycemic level (ie they contain sugar and simple carbs), they are home baked with love and WAY better for you than any processed foods you’ll buy. And they taste DELICIOUS! So go apple picking with the kids and come home and cook these together! The recipe is so easy my boys did it by themselves (even with their little bro as helper!)

You’ll need:

  • 1.5 cups flour

  • 1/2 cup white sugar

  • 1/4 cup brown sugar

  • 4 apples, cored and cut into tiny cubes

  • 2 teaspoons baking powder

  • 2 Tablespoons cinnamon

  • 1/3 cup melted butter

  • 1 egg

  • 1/3 cup of milk

  • 1 cup of crushed pecans

  • Pre-heat oven to 400 degrees.

Grease a 12 cup muffin pan or place muffin sleeves in the pan.

Melt the butter in a pan.

Mix together all of the dry ingredients in a bowl.

Add the egg, milk and butter to the dry ingredients and mix with a large spoon until blended.

Fold in the cubed apples.

Put the batter into the muffin pan and then sprinkle chopped pecans on top of the muffins.

Bake in pre-heated oven for 20-25 minutes. Muffins are done when they are golden brown and a toothpick comes out clean.
