Mustard- Shallot Dressing and Chickpea Salad
Here is a delicious shallot mustard dressing to eat on any salad and a simple chickpea salad recipe to eat for lunch with protein and crunch!
MUSTARD-SHALLOT DRESSING:
Whisk together:
One extremely finely sliced shallot
1 tablespoon dijon mustard
3 tablespoons olive oil
2 tablespoons white wine or sherry vinegar
salt and pepper
CHICKPEA CRUNCH SALAD:
Combine:
1 can or fresh chickpeas
3-4 stalks of celery, chopped
1/2 red onion, chopped
a large handful of sugar snap peas, chopped
(and any other crunchy veggie and/or lettuce you love- red cabbage is great!)
Pour mustard-shallot dressing on top (or any other dressing!)
